Une parcelle en pente, semi-centenaire et consid\u00e9r\u00e9e comme la plus prestigieuse du domaine. \u00c0 presque cent m\u00e8tres d\u2019altitude, un des points culminants du Val de Loire d\u2019o\u00f9 l\u2019on peut observer les 21 clochers alentour, Gilles raconte ses combats quotidiens face aux \u00e9l\u00e9ments : \u00ab C\u2019est l\u00e0 que l\u2019on va chercher de la concentration, du sucre, de l\u2019ar\u00f4me, gr\u00e2ce \u00e0 nos nuits froides et \u00e0 nos journ\u00e9es chaudes qui favorisent une belle maturit\u00e9 du raisin. Mais avec les changements climatiques, notre milieu oc\u00e9anique change de morphologie. Nous devons nous adapter en permanence. En p\u00e9riode de gel, nous suivons la m\u00e9t\u00e9o matin, midi et soir, m\u00eame si les vignes ont la particularit\u00e9 de moins geler du fait de leur exposition sud-ouest et de vents r\u00e9guliers.\u201d<\/p>\t\t\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t<div class=\"elementor-element elementor-element-e1d4e44 elementor-widget elementor-widget-text-editor\" data-id=\"e1d4e44\" data-element_type=\"widget\" data-widget_type=\"text-editor.default\">\n\t\t\t\t<div class=\"elementor-widget-container\">\n\t\t\t\t\t\t\t<p>La d\u00e9termination est aussi de mise, de mi-octobre \u00e0 mi-novembre, lors des r\u00e9coltes tardives, car il n\u2019est pas rare d\u2019effectuer jusqu\u2019\u00e0 6 passages ou plus dans les m\u00eames rangs, afin de recueillir la pr\u00e9cieuse et noble pourriture grise. Suite \u00e0 une r\u00e9colte parcellaire, le traitement de faveur se poursuit au chai, le temps d\u2019un \u00e9levage en barriques de ch\u00eane. Le secret est d\u2019obtenir une forte concentration sans la sentir, entre complexit\u00e9 et fra\u00eecheur. Or, l&#8217;alcool, la sucrosit\u00e9 et l\u2019acidit\u00e9, le triangle d\u2019or des liquoreux trouve ici son point d\u2019\u00e9quilibre. Une parfaite alchimie.\u00a0Et il ne faut pas oublier que si le Ch\u00e2teau de Fesles est c\u00e9l\u00e8bre pour ses blancs, ses 38 hectares se divisent \u00e0 parts \u00e9gales entre les deux couleurs. Sur le plateau, les vignes de cabernet franc donnent un rouge vif, une gamme d\u00e9clin\u00e9e en AOP Anjou blanc et en Ros\u00e9 d\u2019Anjou, avec le Cabernet d\u2019Anjou.<\/p>\t\t\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t<div class=\"elementor-element elementor-element-9c66a5a elementor-widget elementor-widget-text-editor\" data-id=\"9c66a5a\"
